Plov or Palov is the signature dish of Uzbek cuisine. It is the Uzbek version of Pilaf, also called pilau or pulao: a dish of Iranian origin popular all throughout Central Asia. Rice is browned in oil, then cooked in a seasoned broth. In the most extended variety, lamb meat and vegetables (onion and grated carrots) are added. Uzbek plov is often considered to be one of the oldest preparations of rice with Persian or Turkic roots. It was known to have been served to Alexander the Great upon his capture of the Sogdian capital of Samarkand.
