Beef
Suya=Beef of just-slaughtered cow on a stick smothered with hot spices and barbecued to near dryness. Heady stuff. Originally Hausa (Northern Nigeria) but now everywhere in West Africa. These are grass-fed Zebu cattle are that walked to market, and their meat tastes differently and has a tougher texture than grain-fed, marbled beef, more common in the American market.
